Hot spinach and artichoke dip

Easy recipe.  Heat oven to 350°

Indregrients:
-10oz of thawed drained spinach
-6-8oz of artichoke hearts (will have to chop if you prefer and optional)
-3/4 cup mayo (can use reduced fat)
-1/2 cup shredded parmesan cheese
-1/2 cup shredded mozzarella
-1/4 tsp pepper
-1/2 tsp salt
-1/4 tsp garlic powder (optional)
Reserve some cheese to top dip

Mix all ingredients together. Spray dish with non stick spray and put mixture in dish. Top with cheese. Bake at 350° for 20 minutes or until hot and bubbly and enjoy!

***I loved the cantina style tortilla chips with this. You can also eat with pita chips or french bread (lightly toasted or not)***

Quick and easy chicken salad with cilantro lime mayo

This chicken salad is super easy to make.

Ingredients:

(1/2) rotisserie chicken (pulled off bone and cut in bite size pieces). I usually buy the non-flavored chicken and use both the white and dark meat 

1/2 cup red or green grapes cut in half

1/3 cup chopped celery

1/3 cup chopped red onion

1/8 cup chopped cilantro

1 cup mayo

Juice of 1 small lime

Salt and pepper 

Mix the mayo, chopped cilantro. Whisk in lime juice. Add a little salt and pepper to your liking. 

In another bowl mix the chicken, grapes, celery and onion together. Pour in the mayo mixture and mix well. 

Add more salt and pepper if needed.

Quick and Easy Spahetti Sauce

Spaghetti meat sauce (quick & easy) - used my fresh herbs in the sauce


Instead of using jar spaghetti sauce, you can do a simply quick and easy sauce. Brown your meat of choice and drain. Use can tomato sauce and I like to use puree as well as it has a thicker texture. I also like to diced tomatoes, usually the flavored diced tomatoes. I add my minced garlic, onions, fresh basil, flat leaf parsley and oregano. I also add a little sugar to cut the acidity of the tomatoes. Add your drained meat in and let it simmer for about 20-30 minutes (if you have time).

I have also boiled my pasta with fresh chopped herbs as well! Happy cooking!
